Betty’s Sausage Stuffing

Make a day ahead
Ingredients:
2 tubes of pork sausage
1 bag of herb stuffing (such as Pepperidge Farm)
2 celery stalks – chopped fine
2 carrots – chopped fine
1 med onion – chopped fine
2 eggs
1 cup melted butter
1/2 cup chicken stock
2 – 3 cups hot water
Directions:
Break up sausage with fork and saute until cooked.
Remove to large bowl
Add butter, celery, carrots and onion and combine well, then refrigerate till the next day.
Next day:
In large bowl, combine herb stuffing, hot water and 2 beaten eggs
Microwave the sausage mixture to soften.
Add chicken stock and mix all together, add more water if needed.
Put into a buttered baking dish.
Bake at 325 degrees uncovered.
Keep mixing every 20 minutes to keep moist.
Bake about 45 minutes to an hour.
