Egg scramble

A quick healthy breakfast!

2 whole eggs

2 egg whites

1 tablespoon or so of low fat milk

A couple handfuls of fresh spinach (this really cooks down)

A handful of tomatoes (I use grape tomatoes and cut them in half)

Cheddar or any other kind of shredded cheese

I sprinkle some olive oil into the frying pan, then toss in the fresh spinach and stir around until it wilts.

While that is going on, I scramble the whole eggs and egg whites and add about a table spoon or so of  lowfat milk.

I toss the eggs in with the spinach and stir.  Then I add in the tomatoes and gently stir.

When the eggs are almost cooked I toss in some cheese and stir again.

You can make this recipe your own.  I’ve added in mushrooms on occasion as well.

Grab a cup of coffee and enjoy!
